RAW TROUT ON SORREL

SAUCE
½ LIME
½ ORANGE
½ TSP WASABI
½ CUP SOY SAUCE
CHOPPED CHIVES
½ TBSP CHOPPED GINGER

Everything is stirred well together. The fish is cleaned and cut into small bites. Each bite is either wrapped with sorrel or put on a dish and the sauce and sorrel sprinkled over it. A nice touch is to decorate the dish with moss campion.
